About Us
Crème de la Patisserie is a small patisserie business based in Ballyclare, Co. Antrim; specialising in mouth watering French macarons.
Established in 2017 by Steven and wife Judith, Crème de la Patisserie, has grown through its presence at local fairs, markets and the wedding industry.
Steven's passion for baking was developed after a throwaway comment made by Judith, that no one could make macarons as good as the ones she was enjoying as part of an Afternoon Tea. Steven took up the challenge, and despite having no previous baking experience, he had mastered the notoriously tempermental and technical french delicacy in the space of only a month. He perfected the 'Salted Caramel' macaron, which continues to be one of our best sellers to this day.
Our Story So Far...
In 2017 Steven decided to set up the business and also enrol in a 2 year course in Patisserie and Confectionary at Belfast Metropolitan College to hone his patisserie skills. During the course of the two years Steven was assessed in a number of modules, including; Fermented Dough Products, Cakes and Sponges, Pastry, Petit Fours, Centre Pieces and Hot and Cold Desserts; attaining Level 2 in the subject in 2018 and Level 3 in 2019.
Whilst attaining these qualifications; Steven enjoyed re-creating some classic traditional French patisserie; including Mille-Feuille, Paris-Brest, Sachertorte, St. Honoré, Tarte au Citron, Croissants, Soufflé, Pithivier and Tarte Bourdaloue au Poires and enjoys baking them in his spare time.
Crème de la Patisserie is committed to ethical baking and only uses free range eggs while sourcing ingredients locally for the production of all its delicacies.
We serve Northern Ireland through town fairs, markets, weddings and online. All of our dainty delights are hand produced locally in Ballyclare.
